The Truffle Hunter is a profession that requires passion and vocation. The Truffle Hunter, also called "Trifulao", walks for hours and hours, knows the Territories and its Vegetation, trains his Dogs, observes the Weather Forecast and the Moons, and all this, to look for the best Truffles recognized in all the World: the White Truffle of Alba and the Precious Black Truffle of Piedmont.
The search and extraction of the truffle, since 2021 in the Representative List of the Intangible Cultural Heritage of Humanity - UNESCO, is a set of knowledge and practices transmitted for centuries, originating in the Italian Territories that still today characterize the peasant life of entire groups of bearers and practitioners, the “Trifulao”. They possess a wide variety of skills and knowledge (climatic, environmental, vegetation, soil morphology) relating both to the management of natural forest, hill and river ecosystems, and to the dog-truffle relationship. These skills first allow the so-called "search", i.e. the identification of those areas that favor the spontaneous growth of the “truffle plant”, from whose roots the underground mushroom called truffle derives, and then the application of the traditional technique to locate and extract it, the so-called "cavatura". The latter is the result both of the dog's olfactory abilities, improved with training, and of the capabilities of the bearers, who, by means of a special spade called "spade" or "zappino", act without altering the conditions of the ground. This practice allows you to maintain the ecological balance and plant biodiversity, maintaining the tradition that ensures the seasonal biological regeneration of truffle-producing species.
