Each type of truffle has its maturation times and its collection period.
The collection periods are established by regional laws and therefore may vary from region to region.
On a National Italian basis, the Black Summer Truffle is harvested from May 1st to August 31st and from September 21st to November 30th.
The Black Summer Truffle, after a short cooking, can be used as an ingredient in fillings and sauces, risottos or sliced into thin slices on salads.
