Black Summer Truffle

The Piedmont Black Summer Truffle is a particularly popular truffle in Piedmont. It is mainly harvested in the Langhe, Roero and Monferrato areas and is commonly called Scorzone for its hard and wrinkled black-brown rind, rich in pyramidal, protruding and large warts. The pulp is hazelnut in color and is crossed by numerous white veins and has a fungal scent with a very delicate flavor.In Piedmont, the collection of the Black Summer Truffle takes place from 1st June to 31st August.
The Black Summer Truffle, after a short cooking, can be used as an ingredient in fillings and sauces, risottos or sliced into thin slices on fresh salads.
