Each food, ingredient or recipe must have a matching wine capable of enhancing the flavors and aromas of both, trying to avoid that one dominates over the other.
Choosing the right wine for appetizers, first courses, main courses and desserts is essential to create a unique sensory experience for a "Triumph of the Senses".
The combination of food and wine is basically based on criteria recognized over time, such as:
- White Wines and Rose Wines for appetizers and dishes based on fish, caviar or truffles (white truffle from Alba, black truffle from Piedmont and black summer truffle).
- Red Wines for dishes based on meat, eggs or truffles (white truffle from Alba, black truffle from Piedmont and black summer truffle).
- Sweet Wines (still wines and / or sparkling wines) for desserts or to celebrate.
On a personal level, tastes and flavors are subjective and therefore, each of us establishes the most suitable combination for our palate.
